“Avocado toast, but better” – Sophie
INGREDIENTS:
1 Mediterranean Veg & Red Lentil Pouch
½ an avocado
2 tsp. Lemon juice
Small bunch of parsley, chopped
To serve (optional):
Granary or sourdough bread, cut into soldiers
Soft boiled egg
METHOD:
1. Heat contents of pouch according to instructions on back of pack. Drain off any excess liquid and allow to cool entirely.
2. With the back of a fork, mash the lentil mixture with the avocado until mostly smooth and well-combined.
3. Add in lemon and parsley to taste.
4. Spread over crusty bread for the perfect finger-food meal!
