INGREDIENTS:
1 Carrot, Cauliflower & Cumin Pouch
2 eggs or flax eggs
2 Tbsp parmesan cheese or nutritional yeast
1 Tbsp Olive Oil
METHOD:
1. Heat contents of pouch according to instructions on back of pack. Drain off any excess liquid and mash gently with the back of a fork.
2. Mix with eggs and parmesan cheese.
3. Heat oil in a large pan over medium-high heat. Spoon egg mixture into long rectangles (you may need to do this in batches).
4. Cook 2 minutes, flip, and continue cooking until toasty!
