Cosy comfort food is pretty much impossible to turn down on a cold dark evening mid-January, but while we love a big plate of shepherd’s pie with that golden mash top as much as the next person, now that we’ve hit the new year, we’re thinking healthy, low-carb suppers with extra veg are the way forward.
As well as being delicious when simply roasted with olive oil, salt and pepper, Cauliflower cleverly doubles as a carb due to it’s high starch content -meaning this veggie can satisfy even the most serious pasta craving.
