TELL US ABOUT BYRUBY AND HOW IT ALL CAME ABOUT…
I moved to London from Bristol just over 4 years ago now. I had been working in lots of restaurants in Bristol and wanted to explore other areas of food. I found a lovely independent shop in Chelsea called Finns of Chelsea and worked there for over 3 years as head chef. Myself and the two owners, Julia Banister and Milly Bagot, became very close. We saw a massive trend for healthy, high quality food. After co-founder Milly had a baby, she was given a box of frozen food delivered to her direct from a friend. After trying the meals, Milly and I decided we would give it a go ourselves, we started to develop recipes.
What was really important to us throughout the development was creating a healthy, handmade product using on the best ingredients. We wanted to make a product that people could eat as a balanced and healthy lifestyle. We feel you shouldn’t have to compromise on quality for convenience. We have been developing byRuby ever since making sure our core ideas are at the forefront of everything we do.
WHAT DOES A TYPICAL DAY LOOK LIKE FOR YOU?
We get to work at 7.30am, book in deliveries, wait for ingredients to arrive – fresh every day from our suppliers, turn up Radio 2 and cook our hearts out – making as much delicious food as humanly possible in one day!
We then package and blast freeze all the food we made that day locking in all the nutritional value and flavour. Then it’s all emails, logistics and operational issues before heading home for a well-deserved bath (whilst a byRuby meal for two is warming in the oven).

BIGGEST EYE-OPENER ABOUT WORKING IN THE FOOD INDUSTRY?
Trying to be green in business is very hard. Its eye-opening seeing how much wastage there is in the food industry. That was one of the biggest reasons for our food to be frozen, it means we have minimal food wastage in our kitchen and it means that customers can minimise food wastage in their kitchens too!
WHAT’S NEXT?
- We are developing our wholesale range and we will soon be in more independent stores in the UK.
- We hope to partner with pubs, hotels & restaurants to provide them with meals for customers without wastage and high staffing costs. We have already done this with one hotel in Scotland and it has proved very successful so far.
- We are developing a range of deserts making sure we have a delicious vegan range too … watch this space!
