The Lazy Cat Kitchen: A plant-based food blog run by a couple of thirty-something London professionals who ditched their 9-5 and moved to a stunning Greek island in the search of a more fulfilling life. This life change brought about a few others – first they transitioned to a vegan diet and then set up Lazy Cat Kitchen to help vegan newbies like themselves learn to cook amazing vegan food inspired by various cuisines of the world.
Ania and Duncan: Ania is passionate about plant-based cooking. She is the recipe developer, cook, photographer, food stylist and copywriter behind Lazy Cat Kitchen. Duncan is an apt problem solver and with his extensive IT background, he is happy to deal with all things technical on Lazy Cat Kitchen.
After talking to this lovely couple and getting excited about tofu, spaghetti and their seriously good rosemary fries, we have put together a few of their most popular recipes from the last few months…
A hearty main inspired by Duncan’s favourite dish at Wagamama’s. Thick slices of juicy aubergine and sweet potato, coated in panko breadcrumbs and shallow fried until crispy and golden brown. Accompanied by an aromatic curry sauce, plain rice and a simple green salad.

SPANISH CHICKPEA AND SPINACH STEW
‘The spring might have finally graced us with its presence and next week’s weather is looking positively beachy, but the evenings are still quite cold so I thought that a warm, comforting stew is still quite a fitting recipe.’ Ania’s own version of a Spanish classic: garbanzos con espinacas (chickpeas and spinach stew). Chickpeas swimming in lots of rich tomato sauce generously spiced with cumin, smoked paprika and a hint of cayenne pepper.

This isn’t just any old soup, it’s more of a substantial dish full of spice, veggies and noodles bathed in an aromatic curry broth inspired by a Thai classic soup. This vegan Khao Soi is easy to make, filling and very satisfying!

PUMPKIN, SPINACH AND WALNUT SPAGHETTI
This dish is a no fuss, simple, mid-week supper. The pumpkin’s caramelised goodness goes so well with the flavours of garlic, chilli, spinach, walnuts and lemon.

‘Pad Thai (or Phad Thai) has been one of my favourite dishes for a while now…I used a colourful array of crunchy veg in my version, but golden-fried tofu cubes would be great addition too.’ -Ania

The tastiest little recipe of tofu marinated in soy sauce, a sprinkling of cornflour, a quick fry in a little oil and ending up with beautifully golden, crispy on the outside, chewy on the inside pieces of tofu heaven! Oh and topping it off with an aromatic black pepper sauce!

ROSEMARY FRIES WITH ROASTED GARLIC DIP
These make a great side dish, a simple and delicious lunch with a big green salad, or the perfect midnight snack!
